What the brewers say

“We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer, and the second is an overly acidic and funky beer fermented solely with_ Lactobacillus._ We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it’s hard to make.”

What our panel thought

Aroma: “Sweet malt, lemon tartness, and warm dirt. Fresh-cut grass and floral, herbal character in the nose. Slight lemon and earthiness, with Belgian yeast spice.”

Flavor: “Lemon tartness with slight malt wheat sweetness. Some lactic acidity and lemon zest. Round, full body with some background bitterness and slight mineral character. Very creamy. Pleasant graininess in the finish.”

Overall: “Enjoyable and refreshing, but a little one-dimensional. Sour character is extremely subtle, and flavors taste a little mismatched. Great raw wheat character.”

Stone Brewing Company Stone Saison

**Aroma:** “Intense floral and herbal profile of lavender and thyme dominate, backed by sweet lemon citrus notes at the back. Some very light earthy hops. Lemon strengthens as the beer warms.” **Flavor:** “Profile is complex with a strong herbal (lavender and lemon thyme) and perfumey character that blends with the sharpness and sweetness of lemon. A touch grassy. Light malt sweetness with strong bitterness. Nice dry finish with a deep, lingering pithy aftertaste.” **Overall:** “A unique take on saison. The herbal notes and lemon offer a nice contrast to this beer, although the malt character could be more present to support these somewhat unbalanced overtones. Love the smell, but bitter aftertaste is overpowering.

Avery Brewing Company White Rascal

**Aroma:** “Nice citrus fruit character with some spicy notes to add complexity. Light wheat sweetness accompanied by hints of floral coriander and lemon zest.” **Flavor:** “Nice sweet lemon citrus, earthy and pepper notes come through with medium malt sweetness. A very faint carbonic twang, but not terribly complex. Spices are subdued. Very nice balance of body and a crisp, refreshing finish.” **Overall:** “Refreshing and crisp wit. Nice citrus sweetness is profiled in a beer that is solid, but without too much to differentiate it from the crowd. A great example of the style.”

Westbrook Brewing Company Gose

**Aroma:** “Fresh hay with lemon and grapefruit. Bright, sharply acidic, lactic nip in the nose. Salty. Tangy, fruity, citrus notes. Very light malt sweetness. Sour and fruity with some goat and barnyard.” **Flavor:** “Good, clean lactic acid tartness. Moderate sweet malty wheat with salt and high carbonation. Very lemony. Goaty in a good way. Finishes dry and slightly earthy with a nice mineral character. Crisp and refreshing.” **Overall:** “An excellent sour for the summer! A very clean beer with nice lemony tartness. The balance of salt, sourness, and sweetness makes this a great beer to have with food. This would be killer with fried chicken and potato salad, or even to cut through a beurre blanc. Light and refreshing.”
