“Smells like picking raspberries—not only the fruit, but the woodsy leaves as well, with yeasty, floral complements, and that carbonic prickle when you just open a club soda. A bit of beery breadiness—yeasty sourdough, black pepper—along with strong raspberry; a bit of salt in the finish. Full mouthfeel for this style, but not sweet.”

“If you approach this as a summer barleywine, it works. Somewhat spice-driven nose. Bright up front morphs to a plump raisin, plum profile. Bready malt really is needed to go with the rye, which is present enough. The mouthfeel is full, but attenuation is right and avoided going too sweet. It feels like a Bavarian got lost in London and tried to turn a helles into a barleywine.”

Unsung Brewing Company Psionic: Raspberry Sour

The aroma is a bowl of fresh-picked raspberries, reminiscent of those found in the wild. The raspberry flavor is on the sweeter and slightly syrupy side, with a bit of funk in the background. Lingering tannin in the finish adds to the complexity. Pleasantly tart, mildly acidic. Fruit character complements the base beer well.

New Belgium Dominga Grapefruit

New Belgium wood cellar blender Lauren Limbach was gifted a new foeder that she aptly named Dominga—a play on the Spanish word for Sunday.
