Yazoo Brewing Brett Saison

What the brewers say

"Saison fermented with our house Wallonian yeast strain and two citrus-character-producing Brettanomyces strains."

What our panel thought

"Zesty as hell—lemon-lime, white pepper, berries, wood, dry hay. Bright, crisp flavor; beautiful balance of light fruit, hints of pine and citrus, with a light spiciness that persists through the finish. Woody Brett notes in aftertaste. Pleasingly dry, with medium tartness balancing the limited residual malt. Light and refreshing despite the complexity, this is a fantastic beer."

What our editors thought

"Right down the proverbial saison middle, with a touch of tropical Brett in the nose balanced by spicy phenols. The sip is intense—a strong carbonic bite fades into soft citrus and a hint of bitter greens for structure."

Yazoo Brewing Co. Saison de Bois

Spicy, funky nose, with red fruit, minty phenols, overripe mango, tangerine, lemon. Citrus-juicy sweetness up front, moderate sourness; pleasant white grape, pear. Dry, woodsy finish adds to white-wine impression. Lively.

Sante Adairius Rustic Ales Saison Bernice

**Aroma:** “Lemon, apricot, and a hint of leather funk up front give way to a touch of Pilsen malt sweetness and some white pepper. Very light compared to the rest—_Brett_ funk is in the background and very subtle.” **Flavor:** “Ripe juicy apricots with a hint of lemon zest, perfectly complemented by a lactic tartness that cuts the fruitiness. Some nice phenolic and funk layer the complexity, and the finish is balanced with a subtle lingering tartness.” **Overall:** “Extremely well-executed farmhouse beer that exhibits _Brett_ complexity, a perfectly balanced malt bill, and enough tartness to enhance complexity and drinkability. Delicate and very intentional, with a beautiful balance of flavors. Nice crisp citrus clean tartness with just a hint of funk to give it complexity. One of the best we’ve had.”

Little Beast Brewing Fera

Unassuming nose; medium Brett character, subtle tart citrus, pepper. Light, fairly clean flavor; the strong woodsy barrel character comes across a bit heavy-handed. Lingering Brett woodiness and light bread in the aftertaste; lingering berry, peach, white-wine notes. Clean for a ‘wild’ fermented saison.
