Don’t toss these hush puppies to dogs to quell their barking! The beer isn’t good for them, and these ESB-spiked morsels are certainly too tasty to waste!

Active preparation time: 5 minutes
Total time: 15 minutes
Serves: 4

Oil for frying
1 cup cornmeal, fine ground
½ cup self-rising flour
1 tsp sugar
Pinch garlic powder
1 tsp kosher salt
Pinch cayenne pepper
1 egg
1/2 cup (4 fl oz/118 ml) Extra Special Bitter Ale
½ cup onion, diced small
1 jalapeño (seeds removed), minced

In a deep fryer, heat 2–3 inches (5–8 cm) of oil to 350°F (177°C). In a medium bowl, combine the cornmeal, flour, sugar, garlic powder, salt, and cayenne. In a separate bowl combine the egg, beer, onion, and jalapeño and mix well. Pour the wet mixture over the dry mixture and stir together until well combined. Drop tablespoon-size mounds of batter into the oil, making sure to not crowd the pan. Cook, flipping halfway through, until the hush puppies are golden brown (3–4 minutes). Serve with Pan Fried Catfish.
