No campfire needed! A fruit-forward IPA adds lightness to this grown-up version of the classic campfire treat.

2 eggs
1 cup (237 ml) milk
1/3 cup butter, melted
2/3 cup (158 ml) fruit IPA
1½ cup flour
1 cup graham cracker crumbs, divided
1 Tbs baking powder
2 Tbs sugar
½ tsp salt
1 bag marshmallows
1 4.4 oz (125 g) Hershey’s Chocolate bar
Powdered sugar
In a mixing bowl, combine the eggs, milk, butter, and IPA and mix well.
In a second bowl, combine the flour, ½ cup of the graham cracker crumbs, baking powder, sugar, and salt. Add the wet ingredients to the dry ingredients and mix well.
Allow the mixture to rest at room temperature for 20 minutes.
Preheat your waffle maker. Pour in 1 cup of waffle batter, top with 1 tablespoon graham cracker crumbs and close the lid to cook. Remove the cooked waffle to a wire rack to cool. Repeat until you’ve used all the waffle batter.
Once the waffles are cooked and cooled, halve each waffle and place 1 oz (28 g) of chocolate and 2 marshmallows on half of the halves, top with the remaining halves, and toast on a panini grill (this could also be done in the microwave). Top with powdered sugar and serve.
