Recipe: Sandy Valley Mariposa

From Sandy Valley Brewing in Hillsboro, Missouri, Mariposa is a softly textured yet vibrant raspberry ale that gets thoughtful additions of Tanzanian honey, Tanzanian vanilla, cacao nibs, and cacao husks, as well as added fruity oomph from Omega’s Cosmic Punch yeast. It’s also a beer with a personal back story.

Kyle Matthias, head brewer at Sandy Valley Brewing in Hillsboro, Missouri, is embracing a variety of local and foraged ingredients as well as other flavorful additions ethically sourced from farther abroad. As the former assistant brewmaster on the pilot system at Deschutes in Bend, Oregon, Matthias has a keenly developed sense for which ingredients work well in beer and how best to employ them, identifying those that elevate and harmonize with his base beer. Mariposa, meanwhile, is a particularly special one he designed to honor his late sister and to help raise awareness of mental health issues—for more on that, please read his own words below.
