Fermented with saison yeast. We add peach during brewing and then blend the beer with a bit of kombucha.

What our panel thought

Aroma of fresh, juicy stone fruit complemented by earthy hops. Flavor is light and pleasant—a bit funky, a bit sour, a bit spicy—with restrained peach and a kombucha edge. Bready malt, crisp balancing bitterness. Light body, effervescent. Dry finish, a bit stark. Tartness lingers.

What our editors thought

Light candied stone fruit on the nose with a light herbal note. The sip is tightly effervescent, sharp-edged like champagne but without the softening sweetness. Party up front (in the nose), business in the rear (on the sip).

Lovely—bright gold with lush foam. Soft aroma with stone fruit, lemon-lime, light spice, nutty grain, and low, earthy, gueuze-like funk. Gently tart acidity finds harmony with soft bitterness on fluffy carbonation; bright stone-fruit notes in the foreground, lemon-limeade at mid-stage, with a grassy-earthy funk backdrop. Dry finish, lingering stone fruit. Round and harmonious. Beautifully balanced, refreshing. Fabulous.

Aroma: “Stone fruit (peach, apricot, plum). Some noticeable funk (leather, vegetal/onion, bell pepper). Slight perfumy hops. Mild oak, more wood than vanilla.” Flavor: “Overripe juicy and sweet peach with a restrained tartness/sourness. Slight funk. Well-balanced wild characteristics. Neutral oak tannins that give a slightly astringent finish. Slightly solvent. Restrained sourness complements the fresh fruit.” Overall: “The sweetness and juiciness of the peaches balance well with the restrained but complex wild characteristics.”
