“This brew is a rich, big imperial stout deliberately brewed to age in bourbon barrels for many months. It has a rich body, vanilla notes, bourbon, light oak, and an underlying flavor profile of smooth milk chocolate.”

What our panel thought

Aroma: “Strong chocolaty sweetness with vanilla, bourbon, some light cherry, raisin, and plum, plus a touch of mercaptan or plastic. Light oak and lots of malt sweetness, but with some roasted malt and smoke, too.”

Flavor: “A mix of chocolate sweetness and sweet dark fruit (plum/prune) carries through. Moderate vanilla, caramel, leather, and smoke. Strong bourbon carries through the finish, along with some molasses sweetness and medium alcohol. Thick, chewy body, and a sweetness that lingers. A bit of umami/soy sauce in the aftertaste, with bitter hops and alcohol warmth.”

Overall: “When the beer was cold, the chocolate, molasses, and sweetness were more in balance with the umami/soy sauce notes. As it warms, the alcohol dominates. The dark fruits were strong and flavorful, like a dried fruit cocktail, with layers of flavors to enjoy.”

A blend of roast and bourbon across the nose. Cherry pie covered in chocolate with a side of roasted malt. Balanced finish falling on the side of a touch too roasty.

__Aroma:__ “Dark fruity esters up front, with raisin, plum, dark cherry, and currant. Vanilla and oak, with some sherry and raisin aged character, but works nicely in this beer. A unique spice character hues back and forth between bourbon and sarsaparilla.” __Flavor:__ “Intense dark fruity sweetness, with a concentrated raisin and currant character. Chocolate, sherry, and oak add complexity. It’s quite boozy and sweet, with moderate bitterness to balance. The roastiness comes out much more as it warms, and it lingers with every passing sip. Some of the finishing sweetness tastes like vanilla from the oak, or even smoked licorice.” __Overall:__ “Sweet, boozy, and complex. It’s an intense drinking experience that benefits from a healthy blend of both chocolaty malt, molasses, and fruity esters. A bit sweet on the finish, but it has a roasty dryness, too. Given a little time to rest, this will be a fantastic beer.”
