Open-fermented house saison using our own Brett blend and single-hopped with Mosaic.

What our panel thought

Musty lemon-lime nose, peppery and herbal, with soft, nutty wet grain and a touch of grassy hops. Moderately earthy-bitter with a faint tangy edge; wheaty malt, grassy hops, light peppery notes, and a touch of barnyard funk. Dry finish. Muddled. Earthy and dour.

What our editors thought

Teasing a lime-citrus note that pulls back before falling over the edge, the nose retreats into familiar farmhouse lore—grass, hay, rose. The sip meanders through similar territory, dangling sweet promises that (thankfully) remain unfulfilled.

Perennial Artisan Ales Hainaut

Bright gold with lush foam and lace. Bright Noble-hop aroma, spicy and grassy, with Sprite-like lemon-lime notes and clean, bready malt. Soft smoke-and-spice phenolics. Soft, light, grainy flavor, with simple but pleasant herbal-grassy bitterness and notes of pepper and light fruit. Lively. Fairly bitter. Dry finish with lingering pepper-spice. Tastes like a well-made pilsner given an expressive fermentation. Very nice.

Yazoo Brewing Brett Saison

Zesty as hell—lemon-lime, white pepper, berries, wood, dry hay. Bright, crisp flavor; beautiful balance of light fruit, hints of pine and citrus, with a light spiciness that persists through the finish. Woody Brett notes in aftertaste. Pleasingly dry, with medium tartness balancing the limited residual malt. Light and refreshing despite the complexity, this is a fantastic beer.

Birds Fly South Ale Project Out Back Counting Stars

Amazing aroma—huge pepper, citrus, and fresh tropical fruit grounded by damp wood-and-leather funk. _Brett_ orange juice. Bitterness fights with _Brett_ funk in the flavor, crowding out hops but leaving a citrus residue. Unbalanced toward _Brett_ and bitterness.
