What the brewers say

“Fatali Four is a blend of four wine casks and one gin barrel, all of which have homegrown chile peppers added during the final weeks of aging, producing a fruity and tropical flavor profile. The already dry Four becomes bone dry and more acidic under the influence of Brettanomyces, and both the peppers and botanicals from the gin barrel contribute to an oily mouthfeel that acts as a counterpoint to its complex minerality.”

What our panel thought

Aroma: “Some mild buttery biscuit with a sweet herbal aroma. Light tangerine and white pepper, and sweet chile on the very back of the nose. A little funk.”

Flavor: “Starts with a delicate orangey lemon, then the spice of the chile gradually grows throughout the taste. Smoke paprika in the middle, and raspberry as the heat starts to build. The spice sticks in the back of the tongue and lingers. Some buttery and vegetal flavors in the finish.”

Overall: “The sweetness up front helps to balance the chile spice that carries throughout the rest of the taste. The chile flavor is strong throughout, so if you like chile beer this would be one to try. Slight funk is a nice complexity but finishes with a strong hot spice that lingers throughout. Great fruity components equalize the pepper heat.”

**Aroma:** “Lots of fresh herbs—sage is very strong, but it is hard to get anything else off of the nose. Some mild sweetness in the back. Intense herbal aroma of basil, mint, lavender, and sage.” **Flavor:** “There is a bounce between the herbal sage notes and the sweetness from this beer, however the beer is left with a bitterness from the spice that takes over in the finish. Low carbonation and astringent on the finish. Crazy herbal notes—sage, juniper berry, pine taste like you’ve grabbed a bunch and rubbed it in your hands.” **Overall:** “Too much sage for this one—the herbal spice took over both the nose and the flavor. Very herbal beer with lots of basil and floral notes. A genuinely crazy amount of herbs—like a very strong cup of tea with a shot of gin. Could be fun to use as a mixer in a cocktail.”

Springdale Beer Co. Melange De Mures

Amber with ruby highlight. Hazy. Good head. Very light seedy raspberry/blackberry and carbonic note in the aroma and a bit of a chalky/mineral character. Berry represented well in the flavor. Finish is dry and puckering. Overall fruity and drinkable, but not that exciting.

**Aroma:** “Big *Brett* funk on the initial aroma with some nice citrus hops aroma that sits in the back. Slight white-grape ester with some funky wet blanket that play well together. Light malt sweetness.” **Flavor:** “Earthy barnyard *Brett* with apple and slight minty spice. A bit of white pepper and peach. Tart throughout, with a dry finish and high carbonation. A sweetness hits up front with orange and lemon that follow with some nice *Brett* funk. A pepper-like spice helps to cut the sweetness. Big juicy apricot and lemon flavor with a fantastic tartness that carries all the way through. Medium hops flavor or grapefruit and lemon with a slight herbal peppery and spiciness of rye.” **Overall:** “Complex blend of fruity, spicy, and funky—nothing dominates. Tart character and high carbonation make for a very crisp and refreshing beer. Complex and all the flavors from the malt, hops, and fermentation characteristics play well together.”
