Vegetable Crudités with White Rascal Nuoc Cham Recipe

Makes: 1½ cups (12 fl oz/355 ml)

White Rascal Nuoc Cham

8 fl oz (237 ml) Avery White Rascal (or other Belgian-style white beer)
2 Tbs (1 fl oz/30 ml) water
¼ cup sugar
1 tsp sambal chili paste
1 Tbs (½ fl oz/15 ml) sesame oil
½ bunch cilantro, chopped
½ red onion, thinly sliced

Combine all the ingredients and stir until well combined.

Crudité

Serve with any vegetables you like. Just think raw and crunchy. Here are some suggestions:

2 carrots, peeled and cut into sticks
1 English cucumber, seeded and cut into sticks
1 yellow squash, cut into sticks
1 zucchini, cut into sticks
1 bell pepper (any color you fancy), cut into strips
