Waffle Sundae with Chocolate Double Bock Caramel Recipe

Chris Cina’s mentor, David Weihler, gave him this best-ever waffle recipe. Here he’s added the spent grain to tie with the beer and give the waffles a little texture.

Serves: 4–6

Waffles

2 cup flour
½ cup dried spent grain, ground
1 Tbs sugar
1 Tbs baking powder
1 tsp salt
3 eggs, whisked
1½ cup (12 fl oz/355 ml) milk
Juice and zest of 1 orange
½ lb (2 sticks) butter, melted

In a medium bowl, combine the flour, spent grain, sugar, baking powder, and salt; mix well.

In a separate bowl, combine the eggs, milk, orange juice, and orange zest. Add the wet ingredients to the dry ingredients and mix well. Slowly add the melted butter to the batter and mix well.

Cook following the instructions with your waffle maker.

Double Bock Caramel

2 cup sugar
1 Tbs butter at room temperature
½ cup (4 fl oz/118 ml) hot heavy cream
3 fl oz (89 ml) double bock beer
2 oz (57 g) dark chocolate
½ teaspoon sea salt

In a dry heavy-bottom pan, caramelize the sugar over medium-high heat. When the sugar is golden brown and fluid, add the butter and hot cream. Stir together over heat until it comes together.

Remove the pan from the heat and add the beer, chocolate, and salt; stir until combined.

Beer Nuts

2 cup sugar
2 cup (16 fl oz/473 ml) water
½ cup almonds, skin on
½ cup cashews
½ cup pecans
4 cup (32 fl oz/946 ml) vegetable oil
1 tsp sea salt

In a medium saucepan, combine the sugar and water. Bring to a boil and add the nuts. Simmer for 2–3 minutes. Strain the mixture. Spread the nuts on a silicone mat or oiled parchment. Let dry completely (1–2 hours).

When the nuts are dry, heat the vegetable oil in a deep fryer. Fry the nuts for about 15 seconds and scoop out onto a rack to cool. Season with sea salt.

Cherry-Beer Maraschinos

1 cup (8 fl oz/237 ml) cherry beer
1 cup maraschino cherries, preferably the good dark maraschino cherries such as Luxardo Maraschino Cherries

In a wide-mouth jar with a screw lid, combine the cherry beer and the maraschino cherries. Refrigerate and let marinate overnight until they are delicious. Serve atop ice cream sundaes.

1 qt ice cream
2 cup (16 fl oz/473 ml) whipped cream

To serve, arrange 1–2 (depending on the size) waffles on a dessert plate. Top with a scoop of your favorite ice cream. Drizzle with Double Bock Caramel, sprinkle with nuts, and top with whipped cream and a Cherry-Beer Maraschino.

Beer suggestions: For the dopplebock, a sweeter and stronger beer such as Kulmbacher Eisbock (Kulmbach, Germany) would work well. For the cherries, we suggest a cherry beer with deeper flavor notes in addition to cherry, such as Short’s Black Cherry (Bellaire, Michigan) porter.
